This recipe for a delicious homemade strawberry ice cream made from scratch has legitimately become my favorite way to enjoy ice cream these days. And though the recipe calls for an ice cream maker, we’ll even throw in an alternative method to make this ice cream just in case you don’t have one.
How to Make Homemade Strawberry Ice Cream
Follow these simple instructions and you’ll have your own homemade strawberry ice cream ready to go in no time at all:
- Prepare the strawberries. Add the hulled and diced strawberries, lemon juice, and sugar to a bowl and stir to combine.

- Macerate. Leave the strawberries to macerate for 30 minutes.

- Set strawberries aside. Reserve ½ cup of diced strawberries.
- Blend. Use an immersion blender to blend the remaining cup of strawberries.
- Beat. Add the heavy whipping cream, full fat milk, pure vanilla extract, and honey to a bowl and beat to combine.

- Add the blended strawberries. Add the blended strawberries and beat to combine.
- Transfer to the ice cream maker. Pour the mixture into your ice cream maker and follow the manufacturer’s instructions; it should typically take about 20 to 30 minutes.
- Add reserved strawberries. Just before the ice cream is done, add the diced strawberries that you had set aside.
- Serve. Serve immediately.

Strawberry Ice Cream Alternatives
Can I Make This Recipe Without an Ice Cream Maker?
It’s absolutely possible to make this ice cream recipe even if you don’t have an ice cream maker.
Simply follow the recipe as you normally would up until it calls for pouring the mixture into your ice cream maker. Rather than do that, you’ll instead simply pour your mixture into an airtight container before folding in the diced strawberries.
After folding in the berries, you can then freeze the ice cream until solid.

Easy Strawberry Ice Cream Recipe

Ingredients
- 1 ½ cups strawberries, hulled and diced
- ½ cup granulated sugar
- 1 tsp lemon juice
- 2 tbsp honey
- 1 tsp lemon juice
- 1 ¼ cup heavy whipping cream
- ¼ cup full fat milk
- 1 tsp vanilla extract
Instructions
- Add the strawberries, lemon juice and sugar to a bowl and stir to combine.
- Leave to macerate for 30 minutes.
- Reserve ½ cup of diced strawberries.
- Using an immersion blender blend the remaining strawberries.
- Add the heavy cream, milk, vanilla extract and honey to a bowl and beat to combine.
- Add the blended strawberries and beat to combine.
- Pour the mixture into your ice cream maker, and follow your manufacturer’s instructions, usually about 20-30 minutes. (see Note*)
- Just before it’s done, add the reserved diced strawberries.
- Serve immediately or transfer to an airtight container and freeze until ready to serve.
Notes
- If you don’t have ice cream maker, pour the mixture into an airtight container.
- Fold in the reserved strawberries and freeze until solid.

This sounds delicious. I will try it when I buy strawberries next. I did notice that lemon juice was listed twice in ingredients, but instructions only use it once.
