How to Make Zucchini Bread with Applesauce

  1. Mix it: Combine the flour, baking powder, baking soda, salt, and cinnamon.

  2. Beat it: Beat the eggs, granulated sugar, and brown sugar until pale.  Add the vanilla extract, apple sauce, and oil and beat until well-mixed.
  3. Make the batter: Add the dry mixture to the wet mixture and beat until just mixed. Fold in the shredded zucchini. Pour the batter into the prepared pan.

  4. Bake: Bake in a preheated oven for 55 to 60 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool completely before serving.

Freezing and Thawing Instructions

To Freeze: Zucchini bread freezes really well if prepared properly. Before freezing the bread, cut it into slices, and then wrap the whole thing in plastic wrap. Freeze for up to three months. You can take out one slice at a time without defrosting the whole bread.

To Thaw: You can remove the whole loaf or just a slice. If you remove the whole loaf, leave it wrapped and let it sit on the counter for one to two hours or until fully defrosted. If you remove only a slice, you can leave it on the counter for 30 minutes to an hour or pop it in the toaster to defrost it quickly.

Ingredients 

  • 1 ½ cups all purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 ½ cups grated zucchini
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F.
  • Line a 9×5 inch loaf pan with parchment paper and set aside.
  • In a bowl combine the flour, baking powder, baking soda, salt and cinnamon.
  • In the bowl of a stand mixer fitted with the paddle attachment beat the eggs, granulated sugar and brown sugar.
  • Add the vanilla extract, apple sauce and oil and beat until combined.
  • Add the flour mixture and beat until incorporated.
  • Fold in shredded zucchini.
  • Pour the batter into the prepared pan.
  • Bake in preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely before serving.
  • To freeze the bread, wrap the bread in plastic wrap.
  • Freeze until solid.
  • To thaw, leave the bread wrapped and let it sit out on the counter for one to two hours to fully thaw.
