OMG-Good Sour Cream Blueberry Bread (with Lemon Glaze)

Ingredients

For the bread:

  • 2 cups plus 2 tsp all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup sour cream
  • ½ cup vegetable oil
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 2 tsp vanilla extract
  • 1 cup blueberries fresh or frozen
  •  

For the glaze:

  • 1 cup confectioners sugar
  • 2 tbsp fresh lemon juice

Instructions

  • Preheat oven to 350ºF. 
  • Line an 8×4 inch loaf pan with parchment paper. Set aside.
  • In a bowl add the blueberries and 2 teaspoons of flour and toss to coat. Set aside.
  • In a bowl combine the remaining flour, baking powder and salt. Set aside. 
  • In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sugar until pale and fluffy, about 3-5 minutes. 
  • Add the sour cream, oil, lemon zest, lemon juice and vanilla extract and beat until well combined. 
  • Add in the flour mixture and beat until smooth.  
  • Gently fold in the blueberries. 
  • Transfer the batter into the prepared pan. 
  • Bake in preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean. 
  • Remove from the oven and allow to cool completely.
  • To make the glaze, in a bowl combine the lemon juice and confectioners sugar. 
  • Drizzle the glaze over the bread.
