In a saucepan, combine diced mango, sugar, lime zest and lime juice.
Cook over medium heat, stirring occasionally, until the sugar dissolves and the mango starts to soften (about 5 minutes).
Simmer gently over low to medium heat, stirring frequently, until the mixture thickens and reaches a jam-like consistency — about 20–25 minutes.
Remove from the heat.
Mash the mango with a fork or potato masher as it cooks, or use an immersion blender for a smoother texture.
To check for doneness, drag a spoon through the jam — it should leave a trail that doesn’t immediately fill in.
Let it cool slightly, then transfer to a clean jar.
Store in the fridge for up to 2 weeks.
