Lime Cantaloupe Popsicles
Homemade popsicles are so much better than store-bought ones, and these lime cantaloupe popsicles are one of my favorites! Light, fresh and tart.

- ½ cup water
- ½ cup sugar
- juice of half of lime
- 4 cups diced cantaloupe
Add the sugar and water to a saucepan.
Bring to a simmer over medium heat.
Stir until the sugar is dissolved.
Remove from the heat and allow to cool completely.
Add the cantaloupe, lime juice and ¼ cup cooled sugar syrup to a blender and blend until smooth.
Divide the mixture between popsicle molds.
Insert the popsicle sticks and freeze for 3-4 hours.
