Kiwi Jam

This homemade refrigerator kiwi jam is the perfect balance of sweet and tart. A must try for all kiwi fruit lovers!

Ingredients

  • 1 pound peeled and chopped kiwis
  • ¾ cup granulated sugar
  • 1 tsp lemon juice
  • pinch of salt

Instructions

  • Place chopped kiwi, sugar, lemon juice, and a pinch of salt in a saucepan.
Stir everything together.
  • Set the pan over medium heat and bring the mixture to a gentle boil.
Stir frequently.
  • Reduce the heat slightly and simmer for 20–25 minutes, stirring often, until thickened and jam-like.
Remove from heat.
  • Mash the kiwi for a chunky jam, or use an immersion blender for a smoother texture.
Transfer to a clean glass jar and store in the refrigerator for up to 2 weeks.
