  • Combine the ingredients. Add the watermelon cubes, sliced cucumber, cubed feta, chopped mint, olive oil, and lime juice and toss to combine. You can also optionally add 1 tbsp of chopped basil as well.

You should be including ingredients that are crunchy, soft, chewy, etc. We’re also firm believers in making healthy salads that are quite colorful; don’t be afraid to include ingredients like carrots, tomatoes, bell peppers, and more in your salads along with all of those leafy greens.

As with most salad recipes, you can absolutely make this watermelon salad ahead of time.

  • 4 cups ½-inch watermelon cubes, seeds and rind discarded
  • 1 cup sliced cucumber
  • 4 oz feta, cubed
  • 1 tbsp chopped mint plus extra for serving
  • 1 tbsp chopped basil, optional
  • ¼ cup olive oil
  • 1 ½ tbsp lime juice
  • salt and black pepper to taste


  • Add all the ingredients to a bowl and toss to combine.
