Homemade Watermelon Jelly (Easy 4-Ingredient Jelly Recipe)

  1. Add the watermelon to a blender and blend shortly. 
  2. Place a strainer over a bowl.  
  3. Place a double layer of cheesecloth in the strainer.
  4. Pour the watermelon puree into cheesecloth.
  5. Cover with plastic wrap, and put in fridge to allow liquid to drain out. Do not squeeze. 
  6. Take 1 cup of watermelon juice and add to a pot.
  7. Add the sugar and lemon juice.
  8. Bring to a boil over high heat, stirring constantly. 
  9. Remove from the heat. 
  10. Stir in pectin. 
  11. Boil for one more minute, stirring constantly. 
  12. Remove from the heat and pour into sterilized jars.
  13. Allow to cool completely, then store in cool, dark place.
