How to Make Macaroni Salad

  1. Cook the Pasta. Boil macaroni until al dente, drain, rinse with cold water, and let cool.

  2. Make the Dressing. Whisk mayonnaise, Dijon, vinegar, sugar, salt, and pepper until smooth.

  3. Mix Together. Combine cooled pasta with dressing, eggs, pickles, onion, celery, corn, and chives. Stir gently, chill 1 hour, then serve cold with extra chives.

Storage Instructions

To Store: Store leftovers in an airtight container in the fridge for up to 3 days. Stir gently before serving.

Classic Macaroni Salad

This traditional macaroni salad goes with everything (and is one of my most cherished recipes!). Here's how to make it.

Ingredients 

  • 6 hard-boiled eggs, peeled and diced
  • 12 ounces elbow macaroni, uncooked
  • ½ tsp salt, or to taste
  • ¼ tsp ground black pepper, or to taste
  • 2 tbsp Dijon mustard
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 3 medium dill pickles, diced
  • ½ medium red onion, diced
  • 2 ribs celery, chopped
  • 1 cup frozen corn, thawed
  • 1 tbsp chopped fresh chives plus extra for serving

Instructions 

  • Bring a large pot of salted water to a boil.
  • Add macaroni, and cook until al dente according to package instructions.
  • Drain, rinse with cold water to stop the cooking, and set aside to cool.
  • In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
  • In a large bowl, combine the cooled macaroni, mayonnaise mixture, diced eggs, pickles, red onion, celery, corn, and chives.
  • Gently stir everything until well combined and evenly coated with the dressing.
  • Cover and chill the salad for at least 1 hour to let the flavors meld.
  • Taste and adjust seasoning if needed, then serve cold, garnished with extra chives if desired.
