Marinated Tomato Salad with Pickled Red Onions and Garlic Croutons

For the salad: 


For the garlic croutons: 


  1. Add the red wine vinegar and 1 teaspoon of salt to a small bowl and stir until dissolved. 
  2. Add the red onion and toss to combine. 
  3. Let stand for 15-20 minutes. 
  4. To make the garlic croutons, in a pan heat the olive oil over medium heat. 
  5. Add the garlic and cook for 30 seconds. 
  6. Add the bread cubes and cook until golden. 
  7. Remove from the heat and set aside. 
  8. Drain the onions.  
  9. Add the onions, tomatoes, croutons, chives (if using)  and olive oil to a large bowl. 
  10. Season to taste with salt and black pepper. 
  11. Toss to combine. 
  12. Sprinkle with crumbled Gorgonzola and serve.
