Tomato Basil Soup Ingredients

  • Roma Tomatoes – Roma tomatoes are the star of this soup as they’re nice and acidic. 
  • Extra-Virgin Olive Oil – The extra-virgin olive oil is mainly used to sauté the other ingredients.  
  • Soup Base – The vegetable broth, yellow onion, and garlic cloves provide a flavorful base for the soup. 
  • Carrots – Carrots add sweetness and color to the broth.  
  • Balsamic Vinegar – Balsamic vinegar for more acidity.
  • Herbs – Dried thyme and basil pair well with this tomato-based dish. 
  • Seasoning –  Salt and pepper helps bring all of the flavors together.

How to Make Tomato Basil Soup 

  1. Preheat the oven. Set to 350ºF. Line a baking sheet with parchment paper. Prepare the ingredients.
  2. Arrange the tomatoes. Cut side-up on the baking sheet.

  3. Drizzle with oil. Use 2 tablespoons of olive oil on all of the tomatoes. Season with salt and pepper. 
  4. Bake for 1 hour. Check on it midway in case you need to add more olive oil.

  5. Cook the other ingredients. Cook the onion and carrots for 5 minutes in the remaining olive oil. Add the garlic then the roasted tomatoes, balsamic vinegar, thyme and broth and stir to combine.

  6. Let simmer. Season to taste with salt and black pepper.

  7. Blend until smooth. Pour the soup and basil in then blend until smooth.

  8. Serve. Add freshly chopped basil on top or drizzle with some cream. 

Reheating and Freezing Instructions: 

  • To reheat: Gently warm the soup on the stove over low to medium heat, or in the microwave at low to medium power. Stir occasionally to maintain its consistency.
  • To freeze: Portion the cooled soup into freezer-safe containers, allowing room for it to expand. When stored this way, your tomato basil soup can last for up to three months.

Ingredients 

  • pounds Roma tomatoes, halved
  • ¼ cup extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 medium carrots, chopped
  • 4 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 tbsp balsamic vinegar
  • ½ tsp dried thyme
  • 1 cup basil leaves
  • sea salt and freshly ground black pepper
  • 1 tbsp heavy cream for decoration, optional

Instructions 

  • Preheat oven to 350ºF.
  • Line a baking sheet with parchment paper.
  • Arrange the tomato halves cut-side up on the prepared baking sheet.
  • Drizzle with 2 tablespoons of olive oil.
  • Season to taste with salt and black pepper.
  • Bake in preheated oven for 1 hour.
  • Add the remaining olive oil to a large pot.
  • Heat over medium heat.
  • Add the onion and carrots and cook for 5 minutes.
  • Add the garlic and cook for 30 seconds.
  • Add the roasted tomatoes, balsamic vinegar, thyme and broth and stir to combine.
  • Simmer for 20 minutes.
  • Season to taste with salt and black pepper.
  • Pour the soup into a blender.
  • Add the basil and blend until smooth.
  • Serve immediately.

Notes

  • Canned tomatoes can be a convenient alternative to fresh tomatoes. For best results, choose high-quality canned tomatoes. 
  • To further thicken the soup, allow it to simmer uncovered. Take it off the heat once you achieve your desired consistency.
