  • Fresh Cod: Fresh cod filets are mild and tender, making them the perfect canvas for the flavorful tomato basil sauce.
  • Cherry Tomatoes: Sweet and juicy cherry tomatoes are sweeter than regular tomatoes and add tons of flavor to the sauce.
  • Basil: Fragrant and aromatic, fresh basil adds a potent herbed flavor to the sauce.
  • Dry White Wine: Wine helps balance out the acidity of the tomatoes and adds depth of flavor to the sauce.

How to Make Tomato Basil Cod 

  1. Preheat the olive oil in a skillet. Sauté the minced garlic and red pepper flakes.

  2. Add the cherry tomatoes. Continue to cook until they’re blistering.

  3. Add the white wine. Simmer for 2-3 minutes.

  4. Add the rest of the ingredients. Season to taste.
  5. Cook for another 2 minutes. Add the basil.
  6. Remove from the heat and set aside. Prepare and season the cod.

  7. Cook the cod for 3 minutes on each side. Make sure both sides are browned.

  8. Add the sauce. Cook for another minute.

Make Ahead and Reheating Instructions: 

  • To Make Ahead: Prepare the sauce in advance and store it in an airtight container in the refrigerator for up to 2 days. Cook the cod just before serving.
  • To Reheat: Reheat gently in a skillet over low heat until warmed through, being careful not to overcook the cod.

Servings: 4

Ingredients 

  • 4 tbsp olive oil
  • 1 ½ pound fresh cod, cut into filets
  • ¼ tsp crushed red pepper flakes
  • 3 large cloves garlic, finely minced
  • 2 cups cherry tomatoes, sliced in half
  • ¼ cup dry white wine
  • ½ cup fresh basil, finely chopped
  • 2 tbsp fresh lemon juice
  • ½ tsp fresh lemon zest
  • 1 tsp granulated sugar
  • salt and black pepper to taste

Instructions 

  • To make the sauce, heat 2 tablespoons of olive oil in a skillet over medium heat.
  • Add the minced garlic and red pepper flakes and cook for 30 seconds.
  • Add the cherry tomatoes and cook for 9-10 minutes or until they’re soft and blistering.
  • Stir in the white wine and simmer for 2-3 minutes.
  • Add the lemon juice, lemon zest, sugar and salt and black pepper to taste.
  • Cook for another 2 minutes.
  • Stir in the basil and remove from the heat.
  • Set aside.
  • Pat dry the fish with paper towels.
  • Season the cod with salt and black pepper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Place the cod in the skillet and cook 3 minutes per side or until golden brown.
  • Pour the sauce over the cod and cook for one minute.
  • Serve immediately.

Notes

If you’re not familiar with the doneness of certain types of fish, check the temperature of the cod with a food thermometer to ensure that it’s fully cooked.
