Servings: 4

Ingredients 

  • 1 ½ pounds chicken breasts fillets
  • 2 garlic cloves, minced
  • 1 tbsp butter
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes, halved
  • ¼ cup fresh basil, chopped
  • 1 tsp red pepper flakes
  • 2 tbsp balsamic vinegar
  • salt and black pepper to taste

Instructions 

  • Pat the chicken dry with paper towels.
  • Season the chicken with salt and black pepper to taste.
  • Heat the butter and 1 tablespoon of olive oil over medium heat.
  • Add the chicken and cook 4-5 minutes per side or until golden brown.
  • Remove the chicken from the skillet.
  • In the same skillet add the remaining olive oil.
  • Add the garlic and red pepper flakes and cook for 30 seconds.
  • Add the cherry tomatoes and cook for 3-5 minutes or until soft.
  • Add the balsamic vinegar and cook 1 minutes.
  • Remove from the heat.
  • Stir in the chopped basil.
  • Season to taste with salt and black pepper.
  • Add the chicken back to the skillet and spoon the sauce over the top.
  • Serve immediately.

Notes

If you’re not familiar with the doneness of chicken breast, use a food thermometer to check the internal temperature of the chicken breast filets to ensure they’re fully cooked.
