- 1 ½ pounds chicken breasts fillets
- 2 garlic cloves, minced
- 1 tbsp butter
- 2 tbsp olive oil
- 2 cups cherry tomatoes, halved
- ¼ cup fresh basil, chopped
- 1 tsp red pepper flakes
- 2 tbsp balsamic vinegar
- salt and black pepper to taste
Instructions
- Pat the chicken dry with paper towels.
- Season the chicken with salt and black pepper to taste.
- Heat the butter and 1 tablespoon of olive oil over medium heat.
- Add the chicken and cook 4-5 minutes per side or until golden brown.
- Remove the chicken from the skillet.
- In the same skillet add the remaining olive oil.
- Add the garlic and red pepper flakes and cook for 30 seconds.
- Add the cherry tomatoes and cook for 3-5 minutes or until soft.
- Add the balsamic vinegar and cook 1 minutes.
- Remove from the heat.
