How to Make Tomato Basil Bread 

  1. Combine the flour, Parmesan cheese, yeast, garlic powder and salt in a bowl. Stir to combine.

  2. Combine the wet ingredients. In a glass measuring cup, whisk together the water, olive oil, and tomato paste.

  3. Combine the wet and dry mixtures in a stand mixer bowl. Add the basil and chopped sun dried tomatoes.

  4. Beat for about 8 minutes. Use low speed to ensure the dough stays soft and springy.

  5. Prepare the bowl by greasing it with olive oil. Transfer the dough.

  6. Let the dough rise. Cover it with plastic wrap for about 1 hour until the dough doubles in size.

  7. Preheat the oven and baking sheet. Do this before transferring the dough.
  8. Sprinkle some flour on a clean surface then transfer the dough. Stretch it into a rectangular shape.

  9. Roll up the dough. Pinch the seam closed. 
  10. Lightly butter a loaf pan. Transfer the dough.

  11. Cover with plastic wrap. Let the dough rise until it doubles in size.

  12. Preheat the oven. Turn it down slightly before putting the loaf in. P
  13. Bake until golden. It should take about 30 to 35 minutes. 
  14. Remove from the oven. Transfer to a wire rack to cool then serve.

Ingredients 

  • 2 ½ cups bread flour
  • ¼ cup grated Parmesan cheese
  • 2 ¼ tsp instant yeast
  • ½ tsp garlic powder
  • 1 tsp salt
  • 2 tbsp olive oil
  • ¾ cup warm water
  • 3 tbsp tomato paste
  • ¼ cup basil leaves, minced
  • 3 tbsp sun dried tomatoes, drained and finely chopped

Instructions 

  • Add the flour, Parmesan cheese, yeast, garlic powder and salt to a bowl and stir to combine.
  • Add the water, olive oil and tomato paste to a glass measuring cup and whisk to combine.
  • In a bowl of stand mixer fitted with a dough hook add the flour mixture, water mixture, chopped basil and chopped sun dried tomatoes.
  • Beat on low speed for 8 minutes or unlit the dough is soft and springy.
  • Lightly grease a large bowl with olive oil.
  • Transfer the dough into the bowl.
  • Cover with plastic wrap and leave to rise in a warm place for 1 hour or until doubled in size.
  • Preheat oven to 400ºF.
  • Line a baking sheet with parchment paper.
  • Transfer the dough onto a lightly floured surface.
  • Stretch the dough into a rectangular shape.
  • Roll up the dough and pinch the seam.
  • Place the loaf in a loaf pan that has been buttered.
  • Cover with plastic wrap.
  • Let rise for 45 minutes or until doubled in size.
  • Preheat oven to 400ºF.
  • Turn the oven back to 350°F.
  • Bake the bread for 30-35 minutes, or until golden.
  • Remove from the oven.
  • Transfer the loaf to a wire rack to cool completely before slicing and serving.

  • For best results, allow the dough sufficient time to rise and double in size before baking.
