How to Make Strawberry Soda
- Make the Syrup. Combine diced strawberries, sugar, lemon juice, and water in a saucepan. Simmer over medium heat for 10–15 minutes until the strawberries soften and the mixture thickens. Strain and refrigerate until chilled.



- Prepare the Drink. Fill a glass with ice and add 2 tablespoons of strawberry syrup.


- Serve. Top with sparkling or seltzer water, stir gently, and enjoy immediately.

Make-Ahead Instructions
To Make-Ahead: You can prepare the strawberry syrup for your strawberry soda up to 3 days in advance. After straining, store it in an airtight container in the fridge until ready to use.

Strawberry Soda

Ingredients
- ½ pound fresh ripe strawberries, hulled and diced
- ½ cup sugar
- ½ cup water
- 2 tsp fresh lemon juice
- sparkling or seltzer water
Instructions
- In a small saucepan, combine the diced strawberries, sugar, lemon juice and water.
- Bring to a gentle simmer over medium heat and cook for about 10–15 minutes, stirring occasionally, until the strawberries have softened and the mixture becomes syrupy.
- Remove from heat and let it cool slightly.
- Strain the mixture through a fine mesh sieve, pressing to extract as much syrup as possible.
- Discard the solids.
- Refrigerate the syrup until fully chilled.
- To serve, fill a glass with ice.
- Pour in 2 tablespoons of strawberry syrup, then top with sparkling or seltzer water.
- Stir gently and enjoy immediately.
