- 5 scallions, thinly sliced
- 1 ½ tbsp chopped fresh basil
- 3 cups fresh or frozen green peas
- 3 cups vegetable broth
- 2 tbsp chopped fresh mint
- ½ lemon, zested and juiced
- ¼ tsp ground coriander
- salt and freshly ground black pepper
- 3 tbsp whole yogurt
Instructions
- Heat olive oil in a pot over medium heat. Add sliced scallions and cook for 2–3 minutes until softened.
- Stir in basil and cook for another 30 seconds until fragrant.
- Add the green peas, vegetable broth, mint, lemon zest, and ground coriander.
- Bring to a gentle simmer and cook for about 5–7 minutes, or until the peas are tender.
- Remove from heat and blend the soup using an immersion blender (or carefully in batches using a regular blender) until smooth.
- Stir in the lemon juice and season with salt and freshly ground black pepper to taste.
