  1. In a small bowl combine the paprika, garlic powder, onion powder and ½ teaspoon of salt. 
  2. Set aside. 
  3. Heat 1 tablespoon of olive oil in a skillet.
  4. Add the minced garlic and cook for 30 seconds.
  5. Add the spinach and cook until the spinach is wilted.
  6. Remove from the heat and let it cool. 
  7. In a bowl combine the cream cheese, mayonnaise, Parmesan, spinach, remaining salt and red pepper flakes.
  8. Preheat oven to 350°F. 
  9. Place the chicken on a cutting board. 
  10. Season the chicken with paprika garlic mixture. 
  11. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket, making sure not to cut all the way through. 
  12. Stuff the chicken breasts with the spinach filling.
  13. Place the chicken on a baking sheet.
  14. Drizzle with remaining olive oil. 
  15. Bake in preheated oven for 25-30 minutes or until chicken is cooked through.
