Homemade Spinach Pizza with White Sauce (Florentine Pizza)

  1. In a bowl of stand mixer fitted with a dough hook combine the water and yeast.
  2. In another bowl combine the flour and salt. 
  3. Add the olive oil to the bowl of stand mixer.
  4. While the mixer is running, add the flour mixture slowly. 
  5. Beat on low speed for 5 minutes.
  6. Lightly grease a large bowl with olive oil. 
  7. Transfer the dough into the bowl. 
  8. Cover with plastic wrap and leave to rise in a warm place for 1 hour or until doubled in size. 
  9. Place a pizza stone on a rack in the lower third of your oven. 
  10. Preheat the oven to 500°F for at least 30 minutes, preferably an hour.
  11. To make the sauce, melt the butter in a skillet over medium heat. 
  12. Stir in the flour and cook for 30 seconds. 
  13. Whisk in the milk. 
  14. Add the salt and garlic powder and mix to combine. 
  15. Simmer, whisking frequently, until thickened. 
  16. Remove from the heat and set aside. 
  17. Punch the dough. 
  18. Transfer the dough onto a lightly floured surface.
  19. Roll the dough into a circle about ¼ inch thick. 
  20. Lightly sprinkle your pizza peel with cornmeal.
  21. Transfer the dough to the pizza peel. 
  22. Top with white sauce. 
  23. Slide the pizza onto the baking stone in the oven. 
  24. Bake for 5 minutes. 
  25. Remove the pizza from the oven. 
  26. Top with mozzarella and spinach. 
  27. Crack the four eggs onto the pizza. 
  28. Return the pizza to the oven and bake for 10-12 minutes or until the eggs are mostly set.
  29. Remove the pizza from the oven and serve.
