Spinach Omelette

  1. Melt 1 tablespoon of butter in a large skillet over medium heat. 
  2. Add the shallot and cook for 3-4 minutes. 
  3. Add the spinach and cook until the spinach is witted and all the liquid is evaporated. 
  4. Season to taste with salt and black pepper. 
  5. Remove from the heat and set aside. 
  6. Separate the eggs and put the whites into a medium bowl and the yolks in the small bowl.
  7. Beat the egg whites with an electric mixer on low speed until stiff peaks form, 2 to 3 minutes. 
  8. Set aside. 
  9. Season the egg yolks with salt and black pepper to taste and mix well. 
  10. Fold the egg yolks into egg whites mixture. 
  11. Melt 1 tablespoon of butter in a large skillet over medium low heat. 
  12. Pour the egg mixture into the pan and cook for 3-5 minutes until the bottom is set, and golden.
  13. Top with spinach mixture and sprinkle with Parmesan. 
  14. Cover with a lid and cook for a few minutes or until the cheese is melted.
  15. Fold the omelet in half. 
  16. Transfer the omelet to a plate and serve.
