Oh So Good Shrimp with Garlic Sauce

- 1 lb large shrimps, cleaned and deveined
- 2 ½ cups broccoli florets
- 1 red bell pepper, sliced
- 2 tbsp vegetable oil
For the sauce:
- 1/3 cup chicken broth
- 9 garlic cloves, minced
- 1 ½ tsp minced ginger
- 1 tsp rice wine vinegar
- 2 tbsp light soy sauce
- ½ tsp sesame oil
- 1 tsp chili paste
- 1 tbsp dry sherry
- 1 tbsp cornstarch
- 3 tbsp water
- 1 scallion, thinly sliced (optional)
- To make the sauce, in a large glass measuring cup combine all the ingredients and whisk well.
- In a large skillet, heat the oil over high heat.
- Add the broccoli and red pepper and stir-fry for 3-4 minutes.
- Transfer to a plate.
- Add the shrimp in the same skillet and cook for 2 minutes per side or until pink.
- Add the sauce and stir to combine.
- Cook for 1 minute.
- Add the vegetables and stir to combine.
- Cook for one more minute or until the sauce is thickened.
