How to Make Shrimp Asparagus Pasta

  1. Cook Pasta. Boil spaghetti according to package instructions. Drain, saving 1 cup of pasta water.

  2. Cook Shrimp & Veggies. Sauté garlic and red pepper flakes in butter and olive oil. Add asparagus, cook until crisp-tender. Put shrimp in a pan separately and cook until pink.

  3. Combine & Serve. Toss pasta with shrimp mixture, lemon zest, lemon juice, and parsley. Add pasta water to loosen sauce if needed. Serve with Parmesan on top.

Ingredients 

  • 8 oz spaghetti
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • ¼ tsp red pepper flakes, or to taste
  • 1 pound shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp grated lemon zest
  • 1 large lemon, juiced
  • cup fresh parsley, finely chopped
  • freshly grated Parmesan cheese, for serving

Instructions 

  • Cook the spaghetti according to the package instructions. Drain, reserving about 1 cup of pasta water, and set aside.
  • While the pasta is cooking, heat the butter and olive oil in a large skillet over medium heat.
  • Add the garlic and red pepper flakes, and sauté for 1–2 minutes until fragrant.
  • Add the asparagus pieces to the skillet and cook for 3–4 minutes, until tender but still crisp.
  • Add the shrimp, season with salt and pepper, and cook for 2–3 minutes, until the shrimp turn pink and opaque.
  • Add the cooked spaghetti to the skillet, along with the lemon zest, lemon juice, and parsley. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  • Serve topped with freshly grated Parmesan.
