How to Make Garlic Herb Roasted Potatoes and Carrots

  1. Mix seasonings. Preheat oven to 400°F (200°C). In a small bowl, whisk together olive oil, melted butter, garlic, salt, pepper, thyme, and rosemary.

  2. Prep the Potatoes and Carrots. Toss carrots and baby potatoes (or halved small potatoes) with the garlic-herb mixture, then spread in a single layer in a baking dish.

  3. Bake and Serve. Roast for 35–40 minutes, tossing halfway through, until tender and golden brown. Serve warm.

Make-Ahead and Storage Instructions

To Make-Ahead: You can chop the vegetables and mix them with the garlic-herb seasoning up to 1 day in advance. Store in an airtight container in the fridge and roast just before serving.

To Store: Store leftover roasted potatoes and carrots in an airtight container in the fridge for up to 4 days. Reheat in the oven or air fryer for a crispier texture.

Quick garlic herb roasted potatoes and carrots recipe using fresh herbs and garlic for easy sheet pan roasting.

Ingredients 

  • 3 tbsp olive oil
  • 2 tbsp butter melted
  • 1 tbsp garlic minced
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried thyme
  • 1 pound whole carrots, peeled and cut into 1 inch thick slices
  • 1 pound baby potatoes or small potatoes
  • 2 tbsp fresh parsley chopped
  • 2-3 fresh rosemary sprigs, chopped

Instructions 

  • Preheat the oven to 400°F (200°C)
  • In a small bowl, whisk together olive oil, melted butter, garlic, salt, pepper, thyme and rosemary.
  • Add the carrots and baby potatoes to a large bowl. If you’re using small regular potatoes instead of baby ones, cut them in half before roasting.
  • Drizzle the garlic-herb mixture over the vegetables and toss to coat evenly.
  • Arrange the carrots and potatoes in a baking dish in a single layer.
  • Roast for about 35–40 minutes, or until tender and golden brown, tossing halfway through for even cooking.
  • Remove from the oven and serve warm.
