How to Make Roasted Greek Lemon Potatoes
- Prep the Potatoes. Preheat oven to 400°F (200°C). Place quartered potatoes in a baking dish.


- Make the Sauce. In a small bowl, whisk together chicken stock, olive oil, lemon juice, garlic, oregano, and salt. Pour over the potatoes and toss to coat.
- Roast and Serve. Roast for 40–45 minutes, tossing halfway through, until tender and golden. For extra crispiness, broil for a few minutes. Serve warm.

Make-Ahead and Storage Instructions
To Make-Ahead: You can prep the greek lemon potatoes and toss them with the sauce up to 1 day in advance. Store them in the fridge in the baking dish or an airtight container, then roast just before serving.

Ingredients
- 2 pounds new potatoes, quartered
- 1/3 cup chicken stock
- 1/3 cup olive oil
- 1/3 cup lemon juice, freshly squeezed
- 3 garlic cloves, minced
- 1 ½ tsp dried oregano
- salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the quartered potatoes in a large baking dish or roasting pan.
- In a small bowl, whisk together chicken stock, olive oil, lemon juice, garlic, dried oregano, and salt to taste.
- Pour the mixture over the potatoes and toss well to coat.
- Spread the potatoes out evenly in the dish, making sure they are mostly submerged in the liquid.
- Roast uncovered for 40–45 minutes, tossing once halfway through.
- The potatoes should be tender, golden, and slightly crispy around the edges.
- For extra browning, you can broil them for a few minutes at the end.
- Serve warm.
