How to Make Raspberry Chocolate Truffles
- Make the Truffle Filling/Balls. Grind the freeze-dried raspberries to powder in a blender or coffee grinder. Melt the white chocolate, pour in the hot cream, then stir in the raspberry powder, vanilla, and salt. Chill overnight.




- Shape Your Truffles. Scoop the truffle mixture, roll into small balls, and place on parchment paper. Chill for 30 minutes.

- Dip. Melt dark chocolate, dip truffles, and sprinkle with extra raspberry powder. Chill until set and enjoy.


Storage and Freezing Instructions
To Store: Airtight container in fridge, up to 1 week. Serve cold.
To Freeze: Freeze dipped truffles on tray, then container. Store 2 months. Thaw in fridge.

Ingredients
- 12 oz white chocolate chips
- 1 ½ cups freeze dried raspberries plus extra for decorate
- 1 tsp vanilla extract
- pinch of salt
- 7 oz dark chocolate
Instructions
- Place the freeze-dried raspberries in a blender or coffee grinder.
- Grind until fine and sift through a sieve to remove seeds.
- Melt the white chocolate in a microwave-safe bowl at 50% power, stirring in intervals until smooth.
- In a small saucepan, heat the cream until just about to boil.
- Pour the hot cream over the melted white chocolate and stir until smooth.
- Add the raspberry powder, vanilla, and salt, mixing until fully combined.
- Cover the bowl and refrigerate overnight.
- Remove from the fridge 30 minutes before shaping.
- Scoop and roll into small balls.
- Place on a parchment-lined tray and chill for at least 30 minutes.
- Melt the dark chocolate in the microwave at 50% power, stirring in intervals until smooth.
- Dip the chilled truffles into the dark chocolate and sprinkle with extra crushed freeze-dried raspberries.
- Chill until set and serve.
