How to Make Raspberry Italian Cream Soda

  1. Make the Raspberry Syrup. Combine raspberries, sugar, lemon juice, and water in a saucepan. Boil, then simmer for 10–12 minutes, mashing the raspberries. Strain and cool the syrup.

  2. Mix the Soda. Fill a glass with ice, then add 4 tablespoons of raspberry syrup and ½ cup of club soda.

  3. Finish and Serve. Add 2 tablespoons of heavy cream, stir gently, top with whipped cream, and serve immediately.

Make-Ahead Instructions

To Make-Ahead: You can make the raspberry syrup up to 3 days in advance to use in your raspberry italian cream soda. After straining, store it in an airtight container in the fridge. The heavy cream and club soda can also be pre-measured and kept chilled until ready to serve.

Raspberry Italian Cream Soda

Quick homemade raspberry Italian cream soda recipe made with a couple of simple ingredients—raspberry syrup, club soda, and cream.

Ingredients 

For the raspberry syrup:

  • 1 cup fresh raspberries
  • 1 cup granulated sugar
  • 2 tbsp lemon juice, freshly squeezed
  • 1 cup water

For the italian soda:

  • ½ cup club soda
  • 4 tbsp raspberry syrup
  • 2 tbsp heavy cream

For decoration:

  • whipped cream

Instructions 

  • In a small saucepan, combine raspberries, sugar, lemon juice, and water.
  • Bring to a boil over medium heat, then reduce the heat and simmer for about 10–12 minutes, gently mashing the raspberries as they soften.
  • Strain the mixture through a fine mesh sieve into a clean jar or bowl, pressing with a spoon to extract all the liquid.
  • Discard the solids and let the syrup cool completely.
  • Refrigerate until ready to use.
  • To assemble the soda, fill a glass with ice.
  • Pour in 4 tablespoons of raspberry syrup and ½ cup of club soda.
  • Add 2 tablespoons of heavy cream and stir gently until the drink becomes creamy and swirled.
  • Top with a generous dollop of whipped cream and serve immediately.
