Raspberry Chipotle Sauce

Magical Raspberry Chipotle Sauce for Meat, Sandwiches, Spreads and Dipping

  1. Preheat oven to 450ºF.
  2. Arrange the raspberries on a baking sheet and sprinkle with sugar.
  3. Bake in preheated oven for 15 minutes.
  4. Remove from the oven and set aside.
  5. Heat the olive oil in a saucepan over medium heat. 
  6. Add the shallot and cook for 5 minutes. 
  7. Add the garlic and cook for 30 seconds.
  8. Add the white wine, brown sugar, honey, lemon juice, chipotle chiles and adobo sauce (2 tablespoons), liquid smoke and salt to taste. 
  9. Stir to combine. 
  10. Bring to a boil then reduce the heat to low. 
  11. Simmer for 10 minutes. 
  12. Add the raspberries and simmer, stirring frequently, about 7-8 minutes. 
  13. Remove from the heat. 
  14. Using an immersion blender, blend until smooth. 
  15. Add more salt if needed. 
  16. Use immediately or transfer in a jar and refrigerate until ready to use.
