Ingredients

For the crust and crumble topping: 

  • 2 cups rolled oats 
  • 2 cups all-purpose flour 
  • 2/3 cups brown sugar 
  • 1 tsp baking powder 
  • 1 cup butter, melted 
  • pinch of salt 

 

For the filling: 

  • 1 ½ pounds fresh raspberries 
  • ½ cup granulated sugar 
  • 2 tbsp all-purpose flour 
  • 1 tbsp cornstarch 
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350ºF. 
  2. Line a 9×13 inch baking dish with parchment paper. Set aside. 
  3. Add the rolled oats and flour to a food processor and pulse a few times. 
  4. Add the sugar and melted butter and process until crumbly. 
  5. Reserve 1/3 of oat mixture for streusel topping and set aside. 
  6. Press the remaining oat mixture into the bottom of the prepared pan. 
  7. Bake for 10 minutes.
  8. To make the filling, in a bowl add the raspberries, lemon juice, flour, cornstarch and sugar and toss to combine. 
  9. Spread the filling over the crust. 
  10. Sprinkle with reserved oat mixture. 
  11. Bake in preheated oven for 25-30 minutes or until light golden brown. 
  12. Cool and cut into bars.
