For the topping: 


  1. Preheat oven to 350ºF.
  2. Line an 8×8 inch baking pan with parchment paper and set aside. 
  3. To make the crust, in a bowl combine the flour, oats, coconut and brown sugar.
  4. Add the butter and mix to combine. 
  5. Press the dough into the prepared pan. 
  6. Bake in preheated oven for 10 minutes. 
  7. To make the filling, in a saucepan combine the pineapple, sugar, cornstarch and lemon juice. 
  8. Bring to a boil over medium high heat, stirring frequently. 
  9. Reduce the heat and cook over medium heat until the filling is thick, about 7 minutes. 
  10. Pour the filling over the crust. 
  11. Bake in preheated oven for 20 minutes. 
  12. Remove from the oven. 
  13. Sprinkle with coconut. 
  14. Allow to cool completely before serving.
