Homemade Pineapple Baked Beans From Scratch (Easy recipe!)

- 4 (15.5oz) cans navy beans, drained and rinsed
- 8 oz smoked bacon, sliced
- 1 large onion, chopped
- 1/3 cup firmly packed brown sugar
- 1 green bell pepper, chopped
- 1 cup drained crushed pineapple
- 1 chipotle chile in adobo sauce
- ¾ cup BBQ sauce
- ¾ cup brown ale or beer or water
- In a large skillet, cook the bacon over medium heat until crisp.
- Remove from the skillet and chop the bacon into small pieces.
- Discard all but 3 tablespoons of the drippings.
- Add the onion and cook for 4-5 minutes.
- Add the bell pepper and cook for 5 minutes.
- Add the brown sugar, BBQ sauce and mix to combine.
- Add the pineapple and beans and stir to combine.
- Add the chopped bacon chipotle chile in adobo sauce and ale and stir to combine.
- Bake in preheated oven for one hour or until bubbly, stirring once.
