Refrigerator Pickled Green Tomatoes and Fresh Mozzarella

For the pickled green tomatoes: 


The rest of ingredients: 


  1. In a saucepan combine the water, vinegar, honey, turmeric and salt. 
  2. Bring to a boil over high heat. 
  3. In a jar pack the green tomatoes, jalapeno, mustard seeds, black peppercorns and garlic. 
  4. Pour the hot vinegar mixture over the green tomatoes. 
  5. Put the lid on and leave to cool. 
  6. Refrigerate for 2-3 days before serving.
  7. To make the salad, in a small bowl combine the olive oil and garlic. 
  8. Arrange the tomato wedges and mozzarella slices on a plate. 
  9. Season with salt and black pepper to taste. 
  10. Drizzle with garlic olive oil and balsamic glaze (if using).
  11. Decorate with fresh basil leaves and serve.
