If you have a lot of extra garden cherry tomatoes from a big harvest, you’ll also love this sun dried tomato recipe.

Pickled Cherry Tomato Ingredients

Cherry Tomatoes: The fresher, the better! I would highly recommend either garden fresh cherry tomatoes or some from your local farmer’s market.

Dill: Fresh baby dill only.

Vinegar: Apple cider vinegar works best for this recipe.

Garlic: Whole, peeled garlic cloves.

Sugar, Salt and Mustard Seeds: Don’t use table salt! Make sure it’s either Kosher sea salt or pickling salt.

How to Make Pickled Cherry Tomatoes

  1. Add the Cherry Tomatoes and Herbs Into Jars. Place the cherry tomatoes, garlic, dill, and mustard seeds into jars.
  2. Pickle Brine. Bring the acv vinegar, water, salt, and sugar to a boil, then remove from heat.

  3. Pour Brine Into the Jar. Pour the hot brine in the jar and cool. Refrigerate until ready to use.

Pickled Cherry Tomato Uses

  • Bruschetta: These pickled cherry tomatoes give so much life and vibrancy to bruschetta, and are one of my favorite ways to use these.
  • Salads: These will be incredible on pretty much every salad, but my favorite is on wedge salads.
  • Avocado Toast: Just cut in half or do a rough chop and add them on top.
  • Pizza: A great way to freshen up your pizza and cut through the richness of the cheese.

Quick Pickled Cherry Tomatoes

Here's how to make the most addictive quick pickled cherry tomatoes for bruschetta, salads, avocado toast and pizza.

Equipment

  • 2 medium 16oz jars

Ingredients 

  • 1 pounds cherry tomatoes
  • 2 garlic cloves, peeled and sliced
  • ½ tsp mustard seeds
  • 2 dill sprigs
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tbsp kosher salt or pickling salt
  • 1 tsp sugar

Instructions 

  • To make the brine, add the apple cider vinegar, water, salt and sugar to a pot.
  • Stir to combine.
  • Bring to a boil over medium high heat.
  • Remove from the heat.
  • Pack the cheery tomatoes, dill, mustard seeds and garlic into a jars.
  • Pour the hot brine over the cherry tomatoes, leaving 1/2″ of headspace.
  • Close each jar with a nonreactive lid.
  • Gently rotate to move the spices around.
  • Allow to cool to room temperature then refrigerate until needed.

Notes

Allow the cherry tomatoes to pickle for at least 48 hours before eating, preferably around 1-2 weeks for better flavors.
