How to Make Pickled Celery

  1. Cut the Celery and Pack the Jars. Place the celery, garlic, dill, mustard seeds, and peppercorns into your jars.

  2. Make the Pickling Brine. Bring the white vinegar, water, sugar, and salt to a boil, then simmer until dissolved.

  3. Pour and Let Pickle. Pour the hot pickling brine over celery, seal, and cool.

Refrigerator Pickled Celery

Add a 'wow-worthy' addition to your chicken, egg and tuna salads with this homemade pickled celery recipe (or just eat it as a snack!). It's really easy to make and requires no canning.

Total Time: 12 minutes

Equipment

  • 2 small 8oz jars

Ingredients 

  • ¾ cup white vinegar
  • ¾ cup water
  • 1 ½ tsp kosher salt or pickling salt
  • 2 tsp white sugar
  • 2 cups fresh celery, thinly sliced
  • 2 garlic cloves, sliced or smashed
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 4 dill sprigs

Instructions 

  • To make the brine, add the vinegar, water, salt and sugar to a pot.
  • Stir to combine.
  • Bring to a boil over high heat.
  • Reduce the heat and simmer until dissolved.
  • Remove from the heat.
  • Pack the celery, garlic, dill, mustard seeds and black peppercorns into a jars.
  • Pour the hot brine over the celery, leaving 1/2″ of headspace.
  • Close each jar with a nonreactive lid.
  • Gently rotate to move the spices around.
  • Allow to cool to room temperature then refrigerate until needed.

Notes

How long should I pickle this celery before eating?
Let pickle for at least 1-2 weeks in the refrigerator before enjoying.
