Ingredients
For the waffles:
- 1¼ cups all purpose flour
- 2 tbsp brown sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- ⅛ tsp salt
- ½ cup creamy peanut butter
- 3 tbsp unsalted butter, melted plus extra for greasing
- 2 eggs
- 1¼ cup buttermilk
For the strawberry sauce:
- 1 pound fresh strawberries, hulled and chopped
- 6 tbsp sugar
- 2 tsp cornstarch
- zest of ½ lemon
Instructions
- To make the strawberry sauce, add the strawberries and sugar to a small saucepan.
- Cook 5 minutes over medium heat.
- In a small bowl combine the water and cornstarch.
- Add to the saucepan and stir to combine.
- Stir in the lemon zest.
- Cook for 3 minutes or until thickened slightly.
- Remove from the heat.
- Using an immersion blender, blend until smooth.
- Set aside.
- Add the flour, brown sugar, baking powder, baking soda and salt to a bowl and whisk to combine.
- Add the peanut butter, melted butter, eggs and buttermilk to another bowl and whisk to combine.
- Add the dry ingredients and mix until just combined. Do not overmix.
- Preheat the waffle iron and coat it generously with extra melted butter.
- Pour just enough batter to fill the bottom part, do not overfill.
- Cook for 3-5 minute or until golden brown.
- Serve warm with strawberry sauce.
