How to Make Peanut Butter Truffles Without Baking

  1. Mix. Mix butter, peanut butter, vanilla, salt, and powdered sugar. Roll into balls and freeze for 30 minutes.

  2. Melt the chocolate. Microwave dark and milk chocolate chips in short bursts, stirring until smooth.
  3. Dip and chill. Coat the frozen balls in dark chocolate, drizzle with milk chocolate, and chill for at least 1 hour.

Make-Ahead and Freezing Instructions

To Make-Ahead: Peanut butter truffles will stay fresh for about two weeks in the refrigerator. Store them in a resealable container and enjoy them as soon as possible for the best flavor. 

To Freeze: Truffles can also be frozen for up to six months. Make sure to remove them from the freezer 10 to 30 minutes before serving to allow them to thaw.

Peanut Butter Truffles

There is nothing quite as delicious and satisfying as these homemade peanut butter truffles. Truly addictive and one of my most popular recipes.
Prep Time: 30 minutes
Total Time: 30 minutes
Servings: 20 truffles

Ingredients 

  • ½ cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • pinch of salt
  • 3 cups powdered sugar
  • 1 pound dark chocolate chips
  • ½ cup milk chocolate chips

Instructions 

  • In the bowl of a stand mixer fitted with the paddle attachment cream the butter and peanut butter.
  • Add the vanilla extract, salt and powdered sugar and beat to combine.
  • Roll the dough mixture into 1-inch balls.
  • Place the balls on a cookie sheet or chopping board lined with parchment paper.
  • Freeze for 30 minutes.
  • Add the dark chocolate chips to a microwave safe bowl.
  • Microwave on high in 30 seconds intervals stirring between each interval, until the chocolate has melted.
  • Remove the balls from the freezer.
  • Dip each ball into melted chocolate.
  • Add the milk chocolate chips to another microwave safe bowl.
  • Microwave on high in 30 seconds intervals stirring between each interval, until the chocolate has melted.
  • Drizzle the truffles with melted milk chocolate.
  • Refrigerate for minimum one hour before serving.
