How to Make Peanut Butter Tofu Stir Fry

  1. Make the sauce. Blend all the peanut butter sauce ingredients in a food processor until smooth.

  2. Stir fry the tofu and veggies. Fry tofu in a skillet until golden, then set it aside. Cook broccoli and cabbage in the same skillet until tender, then add the tofu back in.

  3. Add the sauce. Pour in the peanut butter sauce and stir. Cook for 1–2 minutes until it thickens slightly, then serve with sesame seeds on top.

Storing and Freezing Instructions

To Store: Scoop the stir fry into a container, let it cool to room temperature, seal the container, and refrigerate. Use within three to five days. 

To Freeze: Stir fry tofu can also be frozen for up to three months. Just cool to room temperature, seal the container, and freeze.

Ingredients 

For the sauce: 

  • 1- inch piece of ginger, peeled and sliced
  • 1 garlic clove, minced
  • ½ cup unsalted creamy peanut butter
  • ¼ cup soy sauce
  • 3 tbsp apple cider vinegar
  • 1 tsp Sriracha sauce
  • 2 tbsp toasted sesame oil
  • 1 tsp honey

The rest of ingredients:

  • 2 tbsp vegetable oil
  • 14 oz extra firm tofu, drained, cut into 1-inch cubes
  • 2 cups roughly chopped Napa cabbage
  • 2 cups broccoli florets
  • sesame seeds, for serving, optional

Instructions 

  • To make the sauce, add all the ingredients to a food processor and process until smooth.
  • Set aside.
  • Heat the vegetable oil in a large skillet over medium high heat.
  • Add the tofu and fry on each side, until golden brown.
  • Remove the tofu from the skillet.
  • Add the broccoli and cabbage to the skillet and fry for 8 minutes or until tender.
  • Return the tofu to the skillet.
  • Add the peanut butter sauce and stir to combine.
  • Cook for 1-2 minutes or until slightly thickened.
  • Remove from the heat.
  • Sprinkle with sesame seeds and serve.
