How to Make Authentic Peanut Butter Soup

  1. Sauté. Heat oil in a large pot. Sauté garlic, onion, and ginger for 3-5 minutes, then cook chicken until fully cooked.
  2. Season & add veggies. Season with cayenne, salt, and pepper. Stir in chopped peanuts and stock. Add sweet potato and cook for 10 minutes, then add tomato and cook for another 10 minutes. Stir in peanut butter and spinach, cook for 1-2 minutes.

  3. Garnish & serve. Season to taste, divide into bowls, and garnish with peanuts and parsley. Serve.

Make-Ahead and Storing Instructions

To Store: African groundnut stew will keep for four to five days in the refrigerator. Make sure to use an airtight container. 

To Make-Ahead: For longer storage, divide the soup into serving-sized portions, pour it into a freezer bag, remove the air, and freeze laying flat. The frozen portions are perfect for meal prep and will keep for three months. Reheat on the stove or in the microwave.

Ingredients 

  • ½ cup roasted peanuts, coarsely chopped
  • 1 tbsp peanut oil
  • 1 small red onion, chopped
  • 1 ½ tsp minced fresh ginger
  • 1 tsp minced garlic
  • ½ tsp cayenne pepper
  • 3 cups chicken stock or water
  • ½ pound skinless, boneless chicken, cut into bite size pieces
  • 1 can, 14 oz chopped tomatoes
  • 1 large sweet potato, peeled and cubed
  • ½ pound spinach
  • 1/3 cup peanut butter, chunky or smooth
  • salt and black pepper to taste
  • 2 tbsp chopped parsley

Instructions 

  • Heat the oil in a large pot over medium heat.
  • Add the onion, garlic and ginger and cook for 3-5 minutes.
  • Add the chicken and cook until no longer pink.
  • Sprinkle with cayenne pepper.
  • Season with salt and black pepper to taste.
  • Stir in ¼ cup of chopped peanuts.
  • Add the stock and sweet potato and cook for 10 minutes.
  • Stir in the chopped tomato and cook for 10 minutes.
  • Add the peanut butter and stir to combine.
  • Stir in spinach and cook for 1-2 minutes or until just whittled.
  • Remove from the heat.
  • Season to taste with salt and black pepper.
  • Divide between serving bowls.
  • Sprinkle with remaining chopped peanuts and parsley and serve.
