How to Make Extra Spicy Peanut Butter Ramen

  1. Make the sauce. Mix peanut butter, chili garlic sauce, Sriracha, brown sugar, soy sauce, Gochugaru, garlic, and peanut oil in a bowl.

  2. Cook the noodles. Follow the package instructions to cook the noodles and drain them.

  3. Combine. Toss the noodles with the sauce, garnish with red pepper flakes and green onions, and serve.

Make-Ahead and Freezing Instructions

To Make-Ahead: Ramen is best made fresh. If the need arises, store the noodles and the sauce separately to keep the noodles from becoming soggy. Use a resealable container to prevent moisture loss in the refrigerator. 

To Freeze: Freeze the sauce and the noodles separately. Cook the noodles al dente to accommodate the texture change during defrosting. The sauce will freeze well and can be stored for up to two months in a freezer-safe bag.

Ingredients 

  • 4 tbsp natural peanut butter
  • 2 tbsp chili garlic sauce
  • 2 tsp Sriracha
  • 1 ½ tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 tsp gochugaru
  • 1 garlic clove, minced
  • 1 green onion, sliced
  • 2 packets instant ramen
  • 2 tbsp peanut oil
  • red pepper flakes for serving

Instructions 

  • To make the sauce, add the peanut butter, chili garlic sauce, Sriracha, brown sugar, soy sauce, gochugaru, garlic and peanut oil to a bowl and stir to combine.
  • Cook the noodles following packet instructions.
  • Drain the noodles.
  • Pour the sauce over noodles and toss o coat.
  • Sprinkle with green onion and red pepper flakes and serve.
