For the pancakes:

- 1 cup milk of choice
For the strawberry maple syrup:
- ½ pound strawberries, diced
- 6 tbsp maple syrup
- 2 tsp cornstarch
- 1 tbsp water
Instructions
- To make the strawberry sauce add the strawberries and maple syrup to a small saucepan.
- Cook 5 minutes over medium heat.
- In a small bowl combine the water and cornstarch.
- Add to the saucepan and stir to combine.
- Cook for 3 minutes or until thickened slightly.
- Remove from the heat and set aside.
- To make the pancakes, add the flour, baking powder, salt and cinnamon to a small bowl and whisk to combine.
- Add the egg, peanut butter and milk to a medium bowl and whisk to combine.
- Add the flour and mix to combine.
- Generously grease a non stick skillet with butter.
- Heat the skillet over medium low heat until hot.
- Drop ¼ cup of batter for each pancake onto the hot skillet.
- Cook until small bubbles begin to form on the top.
- Carefully flip the pancakes and cook on the other side 1-2 minutes or until cooked through.
- Serve warm with strawberry maple syrup.
