How to Make Peanut Butter Granola Bars

  1. Make the glaze. Microwave peanut butter and maple syrup in 30-second increments, stirring in between, until smooth.

  2. Prepare the bars. Mix rolled oats and peanut butter glaze, then transfer to a pan and smooth with a spatula.

  3. Refrigerate. Refrigerate for at least 3 hours or overnight. Cut into bars and serve.

Storing and Freezing Instructions

To Store: Once set and cut, put the bars in a container in the refrigerator. If you’ll be stacking layers, separate the bars with wax paper to prevent the granola bars from sticking. Refrigerated, the bars will stay fresh for about a week. 

To Freeze: If you decide to freeze these bars instead, they will keep for up to three months. Make sure your container is freezer-safe and seals properly. If you add more than one layer of bars, separate the layers with wax paper to prevent sticking.

Ingredients 

  • 1 cup natural, unsalted creamy homemade peanut butter or store-bought
  • ½ cup pure maple syrup
  • 2 ½ cups gluten free rolled oats

Instructions 

  • Line an 8×8 inch baking pan with parchment paper. Set aside.
  • Add the peanut butter and maple syrup to a microwave safe bowl.
  • Microwave on high in 30-second increments until smooth, stirring in between every 30 seconds.
  • Add the rolled oats and peanut butter mixture to a bowl and stir to combine.
  • Transfer to the prepared pan and smooth with spatula.
  • Refrigerate for minimum 3 hours or overnight.
  • Cut into bars and serve.
