- Create the glaze. Microwave peanut butter and maple syrup in 30-second intervals until smooth, stirring in between. Stir in vanilla extract.


- Make the granola. Mix oats, cinnamon, and salt, then add the peanut butter glaze and stir to combine.


- Bake. Spread the mixture on a baking sheet and bake for 15–20 minutes, stirring halfway through, until lightly browned.

Make-Ahead and Freezing Instructions
To Make-Ahead: Cool the granola to room temperature. This can take up to an hour. Once cooled, scoop into a ziplock bag, remove as much air as possible, and store in a cool, dry place. A kitchen pantry works well for storage.
To Freeze: Room temperature granola will only last for about four weeks. To store your granola for longer, put the zip lock bag in the freezer. Frozen granola can be kept for six months or more. Use frozen to prevent the granola from getting soggy.

Ingredients
- 2 cups rolled oats
- ½ tsp ground cinnamon
- ¼ tsp sea salt
- 1/3 cup natural peanut butter
- ¼ cup maple syrup
- 1 tsp pure vanilla extract
Instructions
- Preheat oven to 325ºF.
- Add the peanut butter and maple syrup to a microwave-safe bowl.
- Microwave on high in 30-second increments until smooth, stirring in between every 30 seconds.
- Stir in the vanilla extract.
- Add the oats, cinnamon and salt to a bowl and stir to combine.
- Add the peanut butter mixture and stir to combine.
- Line a baking sheet with parchment paper.
- Spread the mixture on the prepared baking sheet.
- Bake in preheated oven for 15-20 minutes or until lightly browned, stirring halfway through.
