Ingredients
For the cake:
- 1 cup flour
- ½ tsp baking soda
- 1/8 cup vegetable oil
- ¼ cup natural peanut butter
- ½ cup unsweetened applesauce
- ½ cup pumpkin puree
- 1 egg
For the frosting:
- ½ cup plain Greek yogurt
- ¼ cup natural peanut butter
Instructions
- Preheat oven to 350ºF.
- Lightly oil 8 inch springform cake pan.
- Add the flour and baking soda to a bowl and stir to combine.
- Add the oil, egg, peanut butter, apple sauce and pumpkin puree to another bowl and whisk well.
- Add the dry ingredients and stir to combine.
- Pour the mixture into the prepared pan.
- Bake in preheated oven for 25-30 minutes.
- Remove from the oven and allow to cool completely.
- To make the frosting, add the Greek yogurt and peanut butter to a bowl and whisk to combine.
- Top the cake with frosting and serve.
