How to Make Addictive Peanut Butter Chicken

  1. Toss the chicken. Coat the chicken with cornstarch in a bowl.

  2. Make the sauce. Whisk together peanut butter, Hoisin sauce, soy sauce, sesame oil, garlic, and water.

  3. Cook. Cook the chicken in oil until golden, then add the sauce and cook until thickened. Garnish with sesame seeds and green onions. Serve.

Make-Ahead and Freezing Instructions

To Make-Ahead: You can make peanut butter chicken up to three days in advance. Refrigerating this dish matures it and enhances its overall flavor.  

To Freeze: Peanut butter chicken is also an excellent meal for meal prepping. Just cook, portion, and freeze. To defrost, leave the portion in the refrigerator overnight or heat in the microwave until warmed through.

Servings: 6

Ingredients 

  • 1 1/2 lb chicken breast, chopped into bite sized pieces
  • 3 tbsp corn starch
  • 1/4 cup Hoisin sauce
  • 1/4 cup peanut butter
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • ½ cup water
  • 2 tbsp oil for frying
  • 2 tbsp chopped green onion
  • ½ tsp sesame seeds

Instructions 

  • Add the chicken and corn starch to a bowl and toss to coat.
  • Add the peanut butter, Hoisin sauce, soy sauce, sesame oil, garlic and water to a small bowl and whisk to combine.
  • Heat the oil in a large non stick skillet over medium heat.
  • Add the chicken and cook for 5-6 minutes or until golden.
  • Add the sauce and Stir until the chicken is coated.
  • Cook for 4-5 minutes or until the sauce has thickened.
  • Sprinkle with sesame seeds and green onion and serve.
