How to Make Peanut Butter Burgers with Bacon Jam

  1. Cook the bacon and onion. Fry the bacon until crispy and set aside. Cook onions in the bacon drippings with sugar until soft, then stir in bacon, coffee, and water, and cook until thick.

  2. Make the patties. Mix beef with garlic, salt, and pepper. Form into patties and cook for 3-4 minutes per side. Top with cheese.

  3. Assemble the burgers. Spread peanut butter on buns, add patties, and top with bacon jam. Serve immediately.

Make-Ahead and Reheating Instructions

To Make-Ahead: If you don’t mind having them cold, go ahead and make them up to two days in advance. Wrap each burger individually and store them in the refrigerator for later. 

To Reheat: Remove the buns. Put the patties with the bacon jam on top of a plate. Microwave until warmed through. Toast the buns in the oven. Reassemble and enjoy.

Cook Time: 1 hour 20 minutes
Total Time: 1 hour 50 minutes
Servings: 4

Ingredients 

For the burgers: 

  • 1 ½ ground beef
  • 1 garlic clove, minced
  • salt and black pepper to taste
  • 4 tbsp peanut butter
  • 8 slices American cheese
  • 4 hamburger buns

For the bacon jam: 

  • ½ pound thick cut bacon, cut into ½ inch pieces
  • 1 extra large sweet onions, quartered and thickly sliced
  • ¼ cup brown sugar, use coconut sugar for paleo
  • ½ cup water
  • 3 tbsp strong brewed coffee
  • 1 ½ tsp balsamic vinegar

Instructions 

  • Add the bacon to a large skillet and cook over medium heat.
  • Stir occasionally, until the fat is rendered and the bacon is browned.
  • Remove the bacon from the skillet and place on a paper towel-lined plate.
  • Pour out all but 2 tablespoon of the bacon drippings.
  • Add the onion to the skillet and cook for 6-8 minutes or until the onions are translucent.
  • Add the sugar and stir to combine.
  • Reduce the heat to low.
  • Cook uncovered, stirring occasionally for 20 minutes.
  • Add all the bacon, coffee and water to the skillet.
  • Increase heat to medium.
  • Cook for 30 minutes or until the mixture is thick.
  • Remove from the heat.
  • Stir in the balsamic vinegar and set aside.
  • To make the burgers, add the meat and minced garlic to a bowl.
  • Season to taste with salt and black pepper.
  • Divide into 4 balls.
  • Press each ball to form a patty, slightly larger then burger bun.
  • Preheat the grill or a skillet to medium heat.
  • Cook the patties, 3-4 minutes per side.
  • Remove the burgers from the grill and top them with cheese.
  • Dress each side of burger buns with peanut butter.
  • Place the burgers on the bun bases.
  • Top the burgers with bacon jam and bun tops.
  • Serve immediately.
