How to Make The Best Peanut Butter Buckeyes

  1. Make the dough. Beat butter until creamy, then add peanut butter, powdered sugar, and vanilla essence to form a dough.

  2. Prepare the balls. Roll the dough into tablespoon-sized balls and refrigerate for 30 minutes.

  3. Dip. Melt chocolate with coconut oil in 30-second intervals, then dip each ball, leaving some peanut butter exposed. Refrigerate for 30 minutes until set.

Make-Ahead and Freezing Instructions

To Make-Ahead: Peanut butter buckeyes will stay fresh for up to one month in the refrigerator as long as you keep them in a container with a lid and a piece of paper towel on the bottom to keep them from sweating. 

To Freeze:  You can also freeze them for up to two months. Just wrap them in some paper towel, put them in a freezer bag, and freeze.

These are the nostalgic peanut butter buckeyes you remember. Like a reeses peanut butter cup (but so much better) and in ball form!

Cook Time: 2 minutes
Total Time: 22 minutes
Servings: 12 buckeyes

Ingredients 

  • 1 cup peanut butter, smooth
  • 5 tbsp unsalted butter
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups semisweet chocolate
  • 2 tbsp coconut oil

Instructions 

  • In a bowl, beat the butter until creamy.
  • Add the peanut butter and beat to combine.
  • Add the powdered sugar and vanilla extract and mix to combine.
  • Line a large chopping board or baking sheet with parchment paper.
  • Roll the dough into balls about 1 tablespoon in size.
  • Refrigerate for 30 minutes.
  • Add the chocolate and coconut oil to a microwave -safe bowl.
  • Microwave on high in 30-second increments until smooth, stirring in between every 30 seconds. Set aside.
  • Dip each ball into the melted chocolate. Leave a bit of the peanut butter exposed.
  • Refrigerate the balls for 30 minutes or until the chocolate is set.
