How to Make Homemade Old Fashioned Peanut Butter Brittle

  1. Cook the syrup. Heat sugar, water, and corn syrup in a saucepan until boiling, then cook without stirring until it reaches 290°F.

  2. Finish the brittle. Stir in peanut butter, vanilla, baking soda, and peanuts. Spread on a baking sheet, let cool, then break into pieces.

Storing and Freezing Instructions

To Store: Homemade peanut butter brittle can be stored for up to eight weeks. Make sure to keep them sealed and stored away in a dry, cool, and dark corner of your pantry. Do not refrigerate them. The moisture from the fridge will cause the brittle to soften and become chewy. 

To Freeze: Brittle can also be frozen for up to six months. Just make sure to store them in layers separated with wax paper to keep the pieces from sticking together.

Here's how to make old-fashioned peanut butter brittle that's better than any version you've ever had, and is perfect for a gift or gathering.

Servings: 20

Ingredients 

  • 1 cups sugar
  • 2 tbsp water
  • ¾ cup light corn syrup
  • 1 cup salted peanuts, chopped
  • 1 ½ cups peanut butter, warmed
  • 1/2 tsp vanilla
  • ¾ tsp baking soda

Instructions 

  • Line a baking sheet with parchment paper and set aside.
  • Add the granulated sugar.
  • Add the sugar, corn syrup and water to a medium saucepan fitted with a candy/deep-fry thermometer and stir to combine.
  • Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture starts to boil.
  • Increase the heat to high and continue to boil until it reaches 290ºF.
  • Remove from heat.
  • Quickly stir in peanut butter, vanilla, and baking soda.
  • Fold in the chopped peanuts.
  • Pour the mixture onto the prepared baking sheet.
  • Quickly smooth with a rubber spatula into a thin layer.
  • Allow to cool completely.
  • Break into pieces and serve.
