How to Make Peanut Butter Blondies with Butterscotch Chips

  1. Mix the flour. Combine flour, baking soda, cornstarch, and salt, then set aside.
  2. Cream the butter. Beat butter, peanut butter, and sugar until creamy, then add eggs and beat well.

  3. Make the batter and bake. Add the flour mixture to the creamed ingredients, fold in butterscotch chips, and bake for 25–30 minutes. Let cool completely.

Make-Ahead and Storing Instructions

To Make-Ahead: Peanut butter blondies can be made up to three months ahead if you plan to freeze them. Just wrap them tightly to prevent freezer burn and freeze. 

To Store: Blondies will stay fresh for three days at room temperature or one week in the refrigerator. Make sure to seal them in a container to keep them from drying out.

Peanut Butter Blondies

These are the most delicious peanut butter blondies ever (with butterscotch chips). Quick, easy, and impossibly good.

Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 16

Ingredients 

  • ½ cup unsalted butter
  • 1 cup brown sugar
  • ½ cup peanut butter
  • 2 eggs
  • 1 tbsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • pinch of salt
  • 1 cup semi sweet chocolate chips

Instructions 

  • Preheat the oven to 350ºF.
  • Line an 8×8 inch baking pan with parchment paper.
  • In a bowl combine the flour, baking soda, cornstarch and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment cream the butter, peanut butter and sugar.
  • Add the eggs and beat well.
  • Add in the flour mixture and beat until just combined.
  • Fold in the chocolate chips.
  • Bake in preheated oven for 25-30 minutes or until the center is just set.
  • Remove from the oven and allow to cool completely.
