Make-Ahead and Freezing Instructions

To Make-Ahead: Banana muffins will stay fresh at room temperature for four days. Make sure to keep them in a container lined with paper towel. Refrigerate to keep them fresh for up to a week or freeze them for up to three months. 

To Freeze: Wrap each muffin individually with a paper towel first and then plastic wrap. Put them in a freezer-safe bag and label the bag. Freeze for three months. To defrost, leave them in the refrigerator overnight and reheat in the microwave.

Vegan: Replace eggs with flax eggs. Mix two tablespoons of flaxseed meal with six tablespoons of water, let it sit for five minutes, then use it in place of eggs.

Protein upgrade: Mix in a quarter cup of vanilla protein powder. Adjust the amount of milk if needed for consistency.

Ingredients 

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • pinch of salt
  • ½ cup dark chocolate mini chips plus extra for decoration
  • 3 medium ripe bananas, peeled and mashed
  • ¾ cup natural creamy peanut butter
  • 2 large eggs
  • ¼ cup pure maple syrup
  • 2 tsp vanilla extract
  • 1 tbsp milk of choice

Instructions 

  • Preheat oven to 350ºF.
  • Line a 12-cup muffin pan with paper cups. Set aside.
  • In a small bowl add flour, cinnamon, salt and baking powder and mix to combine.
  • In a large bowl add the eggs, peanut butter, maple syrup, vanilla extract, milk and mashed bananas.
  • Mix well to combine.
  • Add the flour mixture and whisk to combine.
  • Fold in the chocolate chips.
  • Scoop the batter into the prepared muffin cups.
  • Sprinkle with extra chocolate chips if using.
  • Bake in preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely before serving.
