Sparkling Peach Bellini (Refreshing, Effervescent and Oh So Good)
Scale
- 2 medium ripe peaches, peeled and sliced
- ½ cup water
- 1 tsp lemon juice
- 1 tsp sugar (optional)
- 1 bottle Prosecco or Champagne, chilled
- Add the peaches, water, lemon juice and pinch of sugar (if using) to a blender and blend until smooth.
- Add 2 tablespoons of the peach puree into each Champagne glass and fill with Prosecco.
- Serve immediately.
