Tangy Onion Vinegar Cucumber Salad (So Easy and Refrigerates Well!)

For the salad: 


For the garlic bread crumbs: 


  1. To make the salad, in a small bowl combine the vinegar, honey and oil. 
  2. In a large bowl add the cucumber, onion and oil vinegar mixture. 
  3. Season to taste with salt and black pepper.
  4. Toss to combine. 
  5. Cover and refrigerate for at least 2 hours before serving. 
  6. To make the bread crumbs, add the bread to a food processor bowl and pulse until roughly chopped.
  7. Heat the olive oil over medium heat in a large skillet. 
  8. Add the garlic and cook for 30 seconds.  
  9. Add the bread crumbs and cook, stirring, until golden brown and crisp. 
  10. Remove the cucumber salad from the fridge. 
  11. Top with warm bread crumbs and serve.
