How to Make Maple Roasted Carrots

  1. Prep the Carrots. Preheat the oven to 400°F. Peel the carrots and cut them into roughly 1-inch pieces so they roast evenly.

  2. Toss and Season. In a large bowl, combine the carrots with the maple syrup, sriracha, olive oil, salt, and pepper. Toss everything together until the carrots are nicely coated.

  3. Roast and Serve. Spread the carrots out in a single layer on a baking sheet. Roast for about 25 to 30 minutes, turning them halfway through, until they’re tender and caramelized around the edges. Serve warm, and maybe drizzle a touch more maple syrup if you want them a little sweeter.

Maple Roasted Carrots Make-Ahead, Storage and Freezing Instructions

To Make-Ahead: Want to save time on the day you cook? Prep the carrots the day before. Peel, slice, and toss them in the maple mix. Cover and chill until you’re ready to roast.

To Store: Keep leftover roasted carrots in a sealed container in the fridge. They’ll stay fresh for about 4 days. When it’s time to eat, pop them in a 350°F oven to reheat.

To Freeze: Freeze your cooled roasted carrots flat on a baking sheet, then move them to a freezer bag once firm. They’ll keep for up to 2 months.

Roasted Carrot Recipe Variations

There are a ton of ways to roast carrots in the oven! Here are some of my all-time favorites that you may want to try as well.

  • Coat them in garlic and parmesan! Some people like things more savory (especially because carrots are already naturally sweet). If this is you, you’ll love my parmesan garlic roasted carrots recipe.
  • Use honey instead! It’s all preference and for your taste preferences, but honey glazed carrots are a great substitute if you like honey more or are just out of maple syrup.
  • Glaze with balsamic and rosemary! These balsamic roasted carrots are incredibly refreshing, and the tartness from the vinegar and herbiness from the rosemary makes the perfect match for roasted carrots.
  • Mix in some potatoes! I love roasted carrots (but I also love roasted potatoes with carrots). It also makes the side dish a lot more hearty.

Spicy Maple Roasted Carrots

  • 1 pound carrots
  • 3 tbsp maple syrup
  • ½ tbsp sriracha
  • 2 tbsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp black pepper

Instructions 

  • Preheat the oven to 400°F.
  • Peel the carrots and cut them into 1-inch pieces.
  • In a large bowl, add the carrots, maple syrup, sriracha, olive oil, kosher salt, and black pepper.
  • Toss well to coat evenly.
  • Arrange the carrots in a single layer.
